What You’ll Need:

For the base:

¾ cup pure passion fruit juice (fresh or bottled, unsweetened)

¼ cup filtered water

Zest of 1 lemon or lime

2 tbsp fresh lemon juice

4g agar-agar powder (not flakes—precision matters)

1¾ cups organic cane sugar

Pinch of sea salt

A drop or two of natural orange or golden food coloring (optional, but it glows)

Note: If you don't have passion fruit juice, a few drops of artificial flavoring will do

For the infusion:

1 tsp THC or CBD tincture (200mg total dose)

Or

1 tsp infused coconut oil, activated and strain-infused

¼ tsp sunflower or soy lecithin (only if using oil, to bind water + oil)

Step-by-Step:

Instructions:

1. Make the Juice Base

Combine passion fruit juice and water in a small saucepan.

Add lemon zest and bring to a gentle simmer.

Remove from heat and let steep for 5 minutes to infuse that citrusy brightness.

Strain to remove zest. Return the liquid to the pot

2. Prepare the Agar

Sprinkle in agar-agar powder and let bloom for 5 minutes.

Turn heat to medium and whisk constantly.

Once dissolved (2–3 minutes), stir in sugar, salt, and lemon juice.

Simmer until thickened slightly—about 2 more minutes.

3. Cool Slightly & Infuse

Remove from heat and let cool down slightly—below 160°F to protect the cannabinoids.

If using tincture:

Stir in the cannabis tincture and mix thoroughly to distribute evenly.

If using infused coconut oil:

Add lecithin to the warm mixture.

Whisk in cannabis oil vigorously to emulsify. The mixture may cloud slightly—no worries!

4. Pour & Set

Pour into molds or a parchment-lined tray (½-inch thick layer works best).

Let it set at room temp for 2 hours or until firm.

Remove from molds or cut into small, gem-like shapes.

5. Dry & Crystallize

Arrange on a drying rack or parchment-lined tray, spaced apart.

Let dry at room temperature for 4–7 days, flipping once daily.

By day 4, you’ll notice a glossy, sugar-crystal crust forming.

> Humidity Tip: If you're in the South or anywhere humid, pop them in a food dehydrator on the lowest setting for 4–6 hours a day or set them near a fan.

Storage:

Once fully dry, store in an airtight container.

Add a food-safe silica pack or a bit of uncooked rice in cheesecloth to keep them crisp.

Lasts 2–3 weeks at room temp if dried properly
